I was saying to someone at work today that I think it’s still too early for radio stations to be playing Christmas songs… then I realised there’s only four and a half weeks to go… best start thinking about getting organised really!
I suppose this post could count though, as it is this week’s contribution to…
12 Weeks of Christmas Treats, hosted by Brenda. I suddenly realised that two of my four posts on this so far have featured caramel and two pecans – but what can you do? Both are just too good.
And if caramel isn’t traditionally Christmasish, I’m sure nuts and spicy deliciousness are….
Spiced pecan sweets:
50g brown sugar
1/4 tsp ground mixed spice
1/2tbsp maple syrup.
Toast the pecans, at 180C for about 5-10 minutes until they smell amazing, then when they’ve cooled a bit, grind them in a food processor with the oats. Stir in the sugar and spice, then add the milk and maple syrup and mix together into a stiff dough.
With dampened hands, roll the dough into balls.
I then rolled some in cocoa powder and dipped others into melted chocolate but I have to say, I think the plain ones are best. Pecans, spice and a slight maple flavour = perfection 🙂
I might need some of these for energy tonight, if the count lasts a long time – although as it’s only a by-election, it’s not going to be an all-nighter like last time! Then I’m going to see Dodgy play tomorrow night so all good.
