I mentioned something exciting the other day, that had cost me money.
I also mentioned driving to Essex in the car, then trying (unsuccessfully) to return in the lorry – and now I can say why!
Let me introduce you to Inka:
I went to see her the other Sunday, liked her straight away and, when she’d come through a vetting, bought her. She arrived on Monday night 🙂
She’s a six-year-old, 16.2hh Irish sports horse and she’s skewbald (brown and white) which I’ve always liked. I’ve got a horrible feeling my saddle doesn’t quite fit so I haven’t been able to ride her much yet – but I’m looking forward to!
I also love the timing that I’m off for the rest of this week so can do more with her. It also meant I could make this:
It’s for my lovely mum, whose birthday it is today. It’s not as impressive as the beautifully-decorated cakes she made us every year when we were little, but I hope she’ll like it. I knew she’d appreciate a lower-fat cake so I made this carrot cake again and iced it with 50g Philadephia Light, 100g sieved icing sugar and some lemon zest – delicious.
We’re going to see Tinker, Tailor, Soldier, Spy at the cinema tonight as a birthday treat 🙂
Happy birthday Mum, you’re brilliant xx
