The last couple of days have been a bit of a rush; I must be getting back into work mode (booooooooo!) flat out from riding horses to bikes to going out – but at least it’s rushing to and from things I like doing π
Tomorrow will be another story. I’m editing this week and coming in to finish sending a paper you’ve had nothing to do with is bad enough on a Monday, let alone a (deadline)Β Tuesday! I’ll be in the office till 6pm-ish, then there’s a major council planning meeting I’ve got to go to because the outcome will be the front page story on one of our editions – and that means I’ll get home at gone 10pm and then have to write it up because we go to press at 9.45am on Wednesday – nice!
But I’m forgetting about that till tomorrow.
I might concentrate instead on fudge:
Ricki’s delicious carob fudge, which I made the other day and have been pigging on ever since. I think it’s fair to say I’m something of a carob convert π
Apart from fudge-scoffing, there was scoffing of a different type at my best friend’s last night, as her husband had cooked a lovely roast dinner. A couple of nice glasses of wine also went down a treat, I believe; lovely night all round.
He made an amazing carrot and swede mash as a side dish and I really went for it on that – my mum makes a version of it but she puts it in the blender (it’s nicknamed “slop” in her house) whereas my friend’s husband just mashed it roughly. It was perhaps not quite the best thing to say when I said I preferred it rough. I meant the swede but thought as I said it, it probably wasn’t phrased quite right. And you can imagine the comments that inspired π
It’s weird though that I haven’t eaten meat for dinner for ages, did last night and feel pretty rubbish today. The two facts might be completely unconnected of course but still, food for thought (sorry).
So today’s dinner was all about veg:
I’m not quite sure why the picture’s that rubbish. But it was more green bean fries, coleslaw, raw spinach, broccoli, asparagus, a sprinkle of nutritional yeast annnnnndddd:
A portobella mushroom “burger” – soaked in balsamic vinegar and a bit of soy sauce, then baked at 180C for about 15 minutes, topped with some vegan cheezy sauce.
Much better – vegetable levels returned to normal!
Does anyone else crave vegetables this much?! It’s not even like I completely went without yesterday… just didn’t eat quite as much as my usual mountains – weird.
And congratulations to Maria, who completed the Stockholm Marathon on Saturday – brilliant achievement!
Have a great week π
oooh that fudge looks delish!
Thank you! It was too – was being the operative word π
So glad you liked the fudge! I do find it hard to resist. π And you are hilarious–preferring the mash “rough”! hee hee.
Ha ha, thank you! And I’d disagree – it was impossible to resist π
wow, so cool. You get to write for the front page? Did I read that right? I think your fuel for writing is spot on!
π
Yes – only for a local paper but I still, after three and a half years, get all pleased when I see my name on the front!
I love mashed carrot and swede, so good! Can’t wait to get some green beans and to roast them up! Hope your busy week goes ok π
You’ll love them if you do! And I need to make myself some more of that mash – just need to remember to get swede π
I usually only eat meat once or maybe twice a week. If I eat it for a few meals in a row my stomach often starts complaining (indigestion, cramps). As you say it could be unrelated, but I think my body has got used to a mainly vegetarian diet.
I crave veggies ALL the time – yum π
I wonder if it is then – maybe! Your body definitely does get used to things so probably that was it – and it’s weird to think that, years ago, I hardly ate any veg but now I can’t go without π
I hope you have a great week. Last week was super busy for me, so I’m taking this one rather slowly…perhaps a but toooooo slow so far lol! π
No, you deserve it after that presentation and everything! Hope you have a really relaxing one π
I’ve been craving veggies after a less-than-stellar eating day yesterday. I always do! Meat (particularly read meat) places a lot of strain on the digestive system and your body has to work very hard to process animal protein (it actually uses up calories doing so, hence the partial ‘science’ behind the stupid Atkins diet).
Good luck for the week ahead…maybe make some more fudge as a treat for afterwards: by the looks of that schedule you’d more than deserve it!
xxx
Me too – if I’ve eaten unhealthier food, I always want more veg and fruit the next day, which is better than craving more sugar I suppose!
And I didn’t realise your body actually had to work harder with meat – or that there was any logic behind Atkins, thank you! π
Hopefully yours days slow down for you a bit soon. π That portabello mushroom looks so delicious!! I love those things, they’re so meaty and delicious. Who would have throught that could come from a mushroom?
Thank you! And meaty is exactly the right word – I wouldn’t have believed it if I hadn’t tried it π
I’m all about veggies so that dish looks GREAT! Mmm mmmm…
New to your blog; happy I found you!
Mary xo
Delightful Bitefuls
I could just eat a plate of veg (especially those green beans) for dinner – although I might be hungry before too long!
Thank you very much, I’m glad too! π
Oooh that fudge looks good! No idea what glycerin is though.
And thanks for the shout out π
It was lovely but I didn’t know either – I just used syrup π
And that’s a pleasure, congratulations again!
I’ve been craving broccoli like crazy lately! So weird- normally all I crave is sugar π
It’s weird isn’t it?! The strangest was a couple of months ago when I woke up a bit hangover… years ago, I’d have craved junk but all I wanted was an apple. Very strange π
that fudge looks delish!!
Soooo good – loving the carob! Thanks for the comment π
